I don't know about you, but late July here in the south officially begins the onset of my summer fatigue. The heat is unrelenting, being outside is all kinds of unbearable and the will to do much of anything is low. Cooking? With heat? Not so appealing. This is when my salad game really kicks into high gear, and my main priority with meals is fast, easy and refreshing. Thanks to an enticing fresh produce basket from Ray of Joy Farm in New Hill, NC, I had a lot to work with this week. A few simple cucumbers caught my eye and within minutes, I had a delicious side dish, thin sliced cucumber in peanut sauce. The recipe is below- enjoy and stay cool!
Cucumber in Peanut Sauce
Yield= 4 side servings
2 Cucumbers, sliced very thin (I use a mandolin, but watch your fingers!)
1/4 cup Creamy Peanut Butter
1 tsp. Fresh grated ginger
Zest and Juice of 1 Lime
1 tsp. Rice Wine Vinegar
1 tsp. Sriracha (or more if you like it hot!)
1 tbsp. chopped Cilantro
Salt to taste
Combine all ingredients except cucumber and whisk to smooth. It will be thick, but as the water releases from the cucumber, it will thin considerably. Season to taste and allow to sit at room temperature for 30 minutes, and enjoy.
